I'm told quite often that I make the best fried chicken in the world. Angel tells this to me and I tell it to myself, so that makes at least two people (My little brother thinks he makes the best fried chicken in the world...but I got my way of making it from him). Here's my secret recipe:
The Best Fried Chicken in the World
Chop chicken breasts into little pieces, of whatever size you prefer. My favorite variety of fried chicken is the 'popcorn' kind.
(No pictures of this step because I'm pretty sure no one wants to see raw meat--it's not pretty)
While heating a layer of oil in a frying pan, mix together whatever ingredients you want to coat your fried chicken in. This mixture may or may not include some combination of the following: white flour, whole wheat flour, cornstarch, flaxseed, bread crumbs, cayenne pepper, black pepper, chili powder, curry powder, cumin, coriander, garlic powder, onion powder, paprika, cinnamon, and whatever else you think sounds something yummy as a part of fried chicken. I recommend against using any type of measuring cups during this step, to avoid predictability in the outcome of the recipe.
The mixture might look something like this before you stir it up.
Coat the chicken pieces with your mixture and fry the chicken. Taste testing is advised, you know, to make sure the chicken is cooked well enough and to make sure that the chef gets the food tax that they deserve.
(Again, no picture--because we eat our fried chicken very quickly)
Tastes great served with rice or mashed potatoes. The chicken will, inevitably, turn out slightly different each time you make it, but that's the key secret to the undying attraction of this recipe. It never gets old.
And there you have it. Rachel, Housewife Style.
